Roasted mustard-maple glazed salmon

- 4-6 pieces Olivia salmon fillet
- 45 ml olive oil
- 45 ml grainy mustard
- 15 ml maple syrup
- 1 lemon, thinly sliced
- Salt and freshly ground black pepper

TO MAKE
- Preheat oven to 200°C (400°F).
- In a small bowl, mix the mustard and maple syrup. Put the salmon fillets on a baking sheet. Season with salt and pepper and spread the mustard mixture over each fillet. Garnish with lemon slices.
- Bake until just cooked through, about 10 minutes. Serve with roasted vegetables.
