
Green curry with basa loin and coconut rice

INGREDIENTS
- 4 to 6 basa loin, cubed
- 45 ml olive oil
- Salt and pepper
- Green curry:
- 45 ml olive oil
- 1 onion, cubed
- 450 g mushrooms, halved
- 2 zucchinis, cubed
- 1 can of 400 ml coconut milk
- 125 ml green curry paste
- Lime juice, to taste
- Salt and freshly ground black pepper
- Garnishes:
- Cooked rice
- Toasted coconut
- Green onion
- Fried onion
- Cilantro
- 4 to 6 basa loin, cubed
- 3 tbsps olive oil
- Salt and pepper
- Green curry:
- 3 tbsps olive oil
- 1 onion, cubed
- 1 lb mushrooms, halved
- 2 zucchinis, cubed
- 1 can of 400 ml coconut milk
- 1/2 cup green curry paste
- Lime juice, to taste
- Salt and freshly ground black pepper
- Garnishes:
- Cooked rice
- Toasted coconut
- Green onion
- Fried onion
- Cilantro
TO MAKE
- In a large pan, heat oil and sautée onion, mushrooms and zucchinis. Add coconut milk and green curry paste. Season with salt and pepper and add lime juice, to taste. Set aside.
- In another pan, heat oil on high heat and sauté fish until golden brown. Season with salt and pepper. Serve fish with the green curry and rice. Garnish to taste.
