
Grilled cajun basa fillet

INGREDIENTS
- 4-6 pieces Olivia basa fillet
- 45 ml olive oil
- 30 ml paprika
- 15 ml dried shallots or onions
- 15 ml dried thyme
- 15 ml dried oregano
- 5 ml kosher salt
- 5 ml cayenne
- 1 lemon, thinly sliced
- Salt and freshly ground black pepper
- Garnishes
- Sauteed spinach
- 4-6 pieces Olivia basa fillet
- 3 tbsps olive oil
- 2 tbsps paprika
- 1 tbsp dried shallots or onions
- 1 tbsp dried thyme
- 1 tbsp dried oregano
- 1 tsp kosher salt
- 1 tsp cayenne
- 1 lemon, thinly sliced
- Salt and freshly ground black pepper
- Garnishes
- Sauteed spinach
TO MAKE
- In a small bowl, combine the spices. Brush fillet with olive oil and coat both sides with spice mixture.
- Warm a large nonstick pan over high heat and cook fish, turning once, until golden brown on both sides and flaky inside, about 3 to 4 minutes. Serve on sauteed spinach with lemon.
