Cold water shrimp spaghetti with pesto

- 500 ml Olivia cold water shrimp, thawed and well drained
- 225 g spaghetti pasta
- 20 cherry tomatoes, halved
- 60 ml chopped Italian parsley
- 60 ml basil pesto
- 2 cups Olivia cold water shrimp, thawed and well drained
- 1/2 lb spaghetti pasta
- 20 cherry tomatoes, halved
- 1/4 cup chopped Italian parsley
- 1/4 cup basil pesto

TO MAKE
- Thaw cold water shrimp, pat dry shrimp with paper towel to remove excess moisture
- Cook pasta in boiling salted water according to package directions. Drain and return to the pot.
- Add the pesto and mix well to coat the pasta. Add the Italian parsley, cherry tomatoes and shrimp and cook for another minute to reheat cold water shrimp. Stir well.
- Serve the pasta in bowls. Garnish with crushed pepper, a pinch of fresh basil and parmesan.
