Marinated butterfly shrimp and mango salad

INGREDIENTS
- 16 to 20 Olivia marinated butterfly shrimp
- 45 ml olive oil
- Mango salad
- 3 mangos, peeled and sliced
- 1 shallot, thinly sliced
- 60 ml basil, thinly sliced
- 60 ml cilantro, roughly chopped
- 1 L arugula
- Salt and pepper
- Dressing
- 30 ml soy sauce
- 30 ml canola oil
- Juice and zest of 3 limes
- Salt and pepper

- 3 tbsps olive oil
- Mango salad
- 3 mangos, peeled and sliced
- 1 shallot, thinly sliced
- 1/4 cup basil, thinly sliced
- 1/4 cup cilantro, roughly chopped
- 4 cups arugula
- Salt and pepper
- Dressing
- 2 tbsps soy sauce
- 2 tbsps canola oil
- Juice and zest of 3 limes
- Salt and pepper

TO MAKE
- In a sauté pan, heat oil and cook the shrimp until pink and opaque for about 5 minutes. Set aside.
- For the salad, mix all the ingredients and toss with the dressing. Garnish with shrimp and serve.
