Cold water shrimp with salad greens and fresh mango

INGREDIENTS
- 675 g Olivia cold water shrimp, thawed and well drained
- 1 mango cut into cubes or strips
- 1 avocado cut into cubes or strips
- 300g leafy salad mix
- 2 green onions thinly sliced diagonally
- 125 ml chopped cilantro
- 60 ml sliced radish
- Mint chopped to taste
- For the dressing
- 125 ml mayonnaise
- 60 ml sweet chili sauce
- Juice of 1/2 lime
- 1 1/2 lb Olivia cold water shrimp, thawed and well drained
- 1 mango cut into cubes or strips
- 1 avocado cut into cubes or strips
- 10 oz leafy salad mix
- 2 green onions thinly sliced diagonally
- 1/2 cup chopped cilantro
- 1/4 cup sliced radish
- Mint chopped to taste
- For the dressing
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- Juice of 1/2 lime

Atlantic Cold Water Shrimp
TO MAKE
- Thaw out cold water shrimp. Drying shrimps in paper towel to remove excess moisture.
- Mix together the mayonnaise, sweet chili and lime juice together and set aside.
- Arrange the leafy salad mix in a large bowl, or individual serving bowls. Layer the salad with avocado, green onions, mangoes, radish and topped with the cold water shrimp.
- To serve drizzle dressing and chopped mint.
