Cold water shrimp sandwich with apple slaw

INGREDIENTS
- 250 ml Olivia cold water shrimp, thawed and well drained
- 1/2 green apple, cut into julienne
- 80 ml mayonnaise
- 5 ml dijon mustard
- 15 ml lemon juice
- A few leaves, chopped fresh parsley
- 4 ciabatta breads, small whole wheat
- Salt and pepper to taste
- 1 cup Olivia cold water shrimp, thawed and well drained

- 1 tsp dijon mustard
- 1 tbsp lemon juice
- A few leaves, chopped fresh parsley
- 4 ciabatta breads, small whole wheat
- Salt and pepper to taste

TO MAKE
- In a bowl, combine the shrimp with the apple, mayonnaise, Dijon mustard, lemon juice and parsley. Salt and pepper.
- Cut the buns in half and top them with the shrimp mixture.
- Serve with a green salad
