Cold water shrimp rolls

INGREDIENTS
- 675 g Olivia cold water shrimp, thawed and well drained
- 1 celery, chopped
- 30 ml chives, minced
- 2 scallions, chopped
- 4 buns
- 15 ml lemon juice
- 125 ml mayonnaise
- 5 ml hot sauce
- olive oil
- salt to taste
- 1.5 lbs Olivia cold water shrimp, thawed and well drained
- 1 celery, chopped
- 2 tbsp chives, minced
- 2 scallions, chopped
- 4 buns
- 1 tbsp lemon juice
- 1/2 cup mayonnaise
- 1 tsp hot sauce
- olive oil
- salt to taste

TO MAKE
- Thaw out and pat dry the cold water shrimp.
- Preheat the grill over high heat.
- Combine the mayonnaise, lemon juice and hot sauce in a large bowl. Whisk well to combine. Fold in the scallions, celery and chives. Chill the mixture.
- Toss cold water shrimp with a good drizzle of olive oil and a pinch of salt.
- Meanwhile, turn the grill to low. Toss the buns on the grill for a few seconds to quickly toast them.
- Add the cold water shrimp to the mayonnaise mixture and toss really well to coat.
- Spoon the shrimp into the toasted buns. Serve with a sprinkle of chives, scallions and flaky sea salt.
