Cold water shrimp macaroni salad

INGREDIENTS
- 450 g Olivia cold water shrimp, thawed and well drained
- 384 g macaroni Pasta, uncooked
- 250 ml english cucumber, diced
- 250 ml red pepper, diced
- 30 ml chopped fresh chives
- Salt and pepper
- For the dressing
- 250 ml mayonnaise
- 45 ml ketchup
- 10 ml tsp salt
- 10 ml tsp sugar
- 15 ml horseradish, optional
- 1 lb Olivia cold water shrimp, thawed and well drained
- 3 cups macaroni Pasta, uncooked
- 1 cup english cucumber, diced
- 1 cup red pepper, diced
- 2 tbsps chopped fresh chives
- Salt and pepper
- For the dressing
- 1 cup mayonnaise
- 3 tbsps ketchup
- 2 tsps tsp salt
- 2 tsps sugar
- 1 tbsp horseradish, optional

TO MAKE
- Thaw out and pat the cold water shrimp dry.
- Boil the pasta in a large pot of salted water according to package instructions. Drain the pasta and run under cold water until cool, drain and place in a large bowl.
- Pat the shrimp dry, add them to the bowl of pasta along with the diced peppers, cucumber and chopped fresh chives. Set aside.
- In a bowl whisk together the ingredients for the dressing. Pour the dressing over the pasta and gently stir together, to coat and mix the pasta salad. Chill until ready to serve.
- Add salt and pepper to taste and serve.
